Eve and Sebastien took over the Newton winery in 2023.
After more than 2 years of construction work and interior design, we officially opened in April 2025, the boutique hotel located in the heart of Beaune.
After graduating from Institut Paul Bocuse, I had the chance to work in prestigious hotels in South-East Asia, work in two bakeries in France, and a Crèpe restaurant chain in New York.
Well-organized and true lover of Gastronomy, I will welcome you at the Hotel du Palais and Solstice, and assist you in making the most of your stay with us.

I am friendly and a real wine addict, ready to take you into the vineyards for an amazing experience, or organize a special and personalized wine tasting at Solstice or at La Cave du Palais.
